Stewardship of terroir is the basis for great Champagne. After taking over his grandparents’ 2.8-hectares of pristine vineyards in Avize—which had previous sold grapes to the larger Champagne houses—Etienne Calsac set out to ensure that the vineyards were planted and farmed following organic methods. L'Échappée Belle is 100% Chardonnay from clay-limestone soils, predominantly premier cru, in the Cote des Blancs region of Champagne. Wine ages on its lees for 7 months before bottling, followed by 36 months in bottle. Low dosage, intricate, and an absolute pleasure to drink.
